This recipe is from my friend Tracey! Their family eats this a lot!
This makes a 9x13 pan. I make it the night before and then warm it up for a few minutes in the oven the next morning. It is good plain or with milk poured over it. This feeds my family of 5 for two breakfasts.
Baked Oatmeal or "Oatmeal Cake"
4 eggs
3/4 cup oil or 1 cup applesauce
1 cup white sugar
1 cup brown sugar
2 tsp salt
2 cups milk
In a small bowl mix the first four ingredients.
Mix oatmeal, baking powder, and salt together in a larger bowl.
Pour in the egg/sugar mixture. Stir until combined.
Next, add the milk. Stir until well combined. I usually let it sit for about 30 minutes. The oatmeal soaks up the milk and the oatmeal cooks more evenly. If not, there is often a gooey layer on the bottom.
Pour into 9x13 pan. Bake 350F (180C) for 30 minutes.

4 tsp baking powder2 tsp salt

Ideas others have shared with me--
- Sprinkle with powdered sugar to make it special.
- Top with some chocolate chips and coconut for the last couple minutes baking for a really special treat!

I love baked oatmeal in the winter, especially when we have guests. This is the recipe I like to use, which has apples, nuts, and cinnamon:

In a 2 cup measuring cup mix these ingredients:
1/2 c. vegetable oil OR unsweetened applesauce
1/3 c. packed brown sugar
1 egg
1/2 tsp. vanilla
Enough 1% milk to fill the measure cup (about 1 c.)
Mix in a larger mixing bowl:
2 c. old fashioned oats
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. cinnamon
Stir with fork then add:
1 coarsely chopped tart apple with skin on
1/2 c. dried fruit (raisins, cherries, cranberries, dates, etc.)
1/2 c. coarsely chopped nuts (walnuts, pecans, almonds but not peanuts)
Pour wet ingredients into dry ones, stir, cover and refrigerate overnight. In the morning, pour it into a 2 qt. baking dish, lightly oiled.
Cover and bake in an oven preheated to 350F for 25 minutes.
