Veronica's Pickling Tips: Making Kimchi

Kimchi is the oldest known fermented food.  While it is certainly good for you, it may seem daunting to make.  However, this is an amazing instructional video for first time kimchi makers. It is a no fail method and she is seriously funny too.

Use as a side, in Korean lettuce wraps, or in a soup like this one.

  1. This has nothing to do with Kimchi, but I wasn't sure how else to pass this on to you. I enjoy your blog and live in Beijing, so it is really helpful! But I have a child with milk allergies so I typically take your recipes and keep "tweaking". I wanted to pass on this substitution chart I found as it has helped me tremendously. I am guessing it might help many more who read your site for meals easier to make overseas and with hard to find ingredients.

    Butter to Oil conversion:
    1 tsp B = 3/4 tsp Oil
    2 tsp B = 1 1/2 tsp Oil
    1 T B = 2 1/2 tsp oil
    2 T B = 1 1/2 T Oil
    1/4 cup = 3 T Oil
    1/3 cup = 1/4 cup Oil
    1/2 cup = 1/4 c + 2T Oil
    2/3 cup = 1/2 cup oil
    3/4 cup = 1/2 cup + 1T oil
    1 cup Butter = 3/4 cup oil
    2 cups Butter = 1 /12 cups Oil
