Sorry for the quietness around here this past week. My family of 7 transitioned to the US for a few months. Here is a guest post from my long-time friend and mentor, Kandy P. Her recipes never disappoint!
We discovered this little treasure one year while on vacation in New Mexico. It was a speciality of the isolated B&B in which we stayed. As you take your first delicious bite, inhale a fresh breath of Rocky Mountain air….even if you have to pretend.

Baked Apple Pancake
5 Tablespoons melted butter
3 eggs, lightly beaten
3/4 cup milk
1 Tablespoon granulated sugar
1/2 teaspoon vanilla
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup plus 1 Tablespoon flour
2 small apples, peeled, cored & thinly sliced
3 Tablespoons brown sugar
Powdered sugar
Combine 2 Tablespoons melted butter with eggs, milk, granulated sugar, vanilla, cinnamon, salt & flour. Beat until mixed. Set aside.
Heat remaining 3 Tablespoons of butter with apple slices I 10-inch skillet until sizzling and slightly cooked.
Pour in batter. Sprinkle top with brown sugar and bake (in the skillet) at 450F (220C) for 25 minutes or until well-browned & puffed. Dust with powdered sugar. Serve immediately. Cut into wedges to serve. Makes 6 servings.
