Cinnamon Apple Swirled Breakfast Bread

I haven't gotten to do as much fall baking as I'd like this year. Mostly, it just doesn't feel like fall! We've still got relatively warm temperatures where we're at in the US right now. What I have done has been in the apple realm though! I'm loving fruity things at the moment. I found this apple cinnamon bread recipe through Pinterest. I made a couple changes to cut back on some of the butter and its really good! Its super easy to throw together. Hope you enjoy it!


Cinnamon Apple Swirled Breakfast Bread
2/3 cup white sugar
1/4 cup butter, softened
2 Tbs Greek yogurt
2 eggs
1 1/2 tsp vanilla
1 1/2 cups all purpose flour
1 3/4 tsp baking powder
1/4 tsp salt
1/2 cup milk

1 medium apple, finely diced (~3/4-1 cup)
1/3 cup brown sugar
1 tsp cinnamon, heaping
pinch or two of nutmeg

Begin by mixing brown sugar, cinnamon and nutmeg in a small bowl and set aside. Cream together the white sugar, butter, and Greek yogurt. Add in eggs, one at a time, and then the vanilla. Mix in 1 cup of the flour, baking powder, and salt. Mix in the milk, then mix in the final 1/2 cup of flour. Grease and flour a loaf pan and pour in half the batter. Sprinkle on half the brown sugar mixture and half the diced apples. Cover with the rest of the batter and then top that with the remaining brown sugar mixture and apples. Bake at 350F (180C) for 45-50 minutes or until lightly browned on top and a toothpick or knife comes out clean.


Notes: You could totally just double this recipe and cook it in a 9x9 or 7x11 pan more like a coffee cake. That's really the texture and flavor this has. Went great with a cup of coffee! You could probably even make it as muffins! FYI, if you're not into baking with Greek yogurt or don't have any on hand, you can just use 1/2 cup of butter total. Also, I haven't tried it but you should be able to substitute 3 Tbs oil for the 1/4 cup butter in a bread like this and still have it turn out great!
