Candy Cane Simple Syrup

It seems like I always have candy canes left after Christmas. For many years, we couldn't even get them in Asia and we didn't have any at all. But last year Taobao had bunches of peppermint ones for ordering. I got so excited that I over ordered. I had high hopes for lots of peppermint crunch topped desserts, but didn't get around to all that many. And I really never end up giving my kids many to eat as they just make a sticky mess. Same story here in the US this Christmas. But I saw this idea for a Candy Cane syrup that looked fun. Since its still very chilly and wintery weather, worthy of lots of hot chocolate, this Candy Cane syrup is still fun. Plus it helps use up leftover candy canes! We've been adding it to hot chocolate and loving it. Its also good in coffee with a  little bit of chocolate to make a peppermint mocha. Enjoy!

Candy Cane Simple Syrup
1 cup water
12 regular-sized candy canes (6oz or 170g worth)

Unwrap all the candy canes.

Place water and broken candy in a pot. Bring to a boil over medium high heat, stirring in the candy canes. Cut back heat to simmer until candy is melted in. Remove from heat. Cool and store in a jar. Add by the spoonful to hot chocolate, coffee, etc..
