Its guest photo day! All of today's pictures come from my little sister, Cat. She's a photographer and is now opening her own boutique hostel in Sarajevo, The Doctor's House. I'm just so excited for her and this new venture! Brian and I are brainstorming when our gang can all go! Today's recipe is my mom's. Cat is the biggest fan of our mom's zucchini bread, so she's the one that makes it regularly. All 3 of us hope you'll enjoy it!
My Mom's Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
3 cups all-purpose flour
3 tsp cinnamon
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
2 cups grated zucchini
3 tsp vanilla
1 cup nuts, chopped
1 cup raisins
Begin by grating the zucchini and chopping nuts. Set aside. Cream together eggs, oil, and sugar. Sift together flour, cinnamon, baking powder, baking soda and salt.
Mix into the creamed mixture.
Add zucchini, vanilla, nuts and raisins. Grease and flour 2 8x4 inch loaf pans (or something equivalent).
Divide batter between the 2 pans. Bake approximately 1 hour at 325F (160C).
