I love waffles. I like putting a little bit of syrup in each hole. I mean, who doesn't? When we first moved overseas I took a waffle maker with us. It finally bit the dust a year or two ago and I found a local one to replace it with from Taobao. Unfortunately, it failed to ever make a decent waffle. I don't think it got hot enough. So here in the US this Christmas I got a new one. It will be taking up a portion of my precious luggage space to go back. It makes a great waffle. Now, personally, I like thick, Belgian- style waffles. But let's be honest--when you've got 6 other people who are anxious to eat breakfast, there is hardly time for mixing batter, beating egg whites, folding in, etc. So I make a quick and easy waffle batter that can just be thrown together with a whisk and it still tastes quite good to us! Hope you'll enjoy it if you have a waffle maker!
Quick and Easy Waffles
1 3/4 cup all purpose flour
1 Tbs baking powder
1/2 tsp salt
1 3/4 cup milk
1/4 cup melted butter (can sub oil if you want)
1/4 cup oil
2 eggs
1 tsp vanilla
Whisk together flour, baking powder and salt in a large bowl. In a smaller bowl, whisk together the milk, melted butter, oil, eggs, and vanilla. Pour into the dry ingredients and mix just until everything is combined. Allow to sit while you heat up the waffle maker. Cook according to waffle maker instructions, as they all vary. Serve hot with maple syrup or fruit or your favorite toppings. Should yield 4-6 waffles depending on size.
Notes: You can use all oil or all melted butter depending on what you like or can get. I like the flavor from a little melted butter so that's what I do but its good with all oil too. These freeze nicely and can be reheated in a hot oven in just 5 minutes or so.

Sara Beth, thanks for this recipe! We love waffles at our house! Please let me know what waffle maker you end up bringing back. I also have a taobao one and it is sooooo slow! I am thinking I may need to get one when we are back in the states this summer.

I know I'll have to run it through a voltage regulator, but I also am bringing back a KitchenAid mixer so that will need it too.We have one we bought in China that has 110V and 220V that we use for our computers and phones to try and keep the batteries from dying as fast. :) For the waffle maker, I did a lot of research and I went with the Cuisinart WAF-200. Its a round waffle maker but makes a really large waffle that actually is more like 4 pieces seen in the picture above. I only eat 2 of the pieces and the kids eat 1-2. So we can all get pieces and eat relatively hot waffles at close to the same time! :) I got mine for about $15-20 cheaper than retail by shopping around online a bit.
