Oh my friends. I have been waiting impatiently through days of no internet just to share this recipe with you! Don't you just love when they cut your internet off because you need to pay your bill then wait 24 more hours to actually turn it back on? So frustrating. But this hot chocolate will help make it all better. Kimberlynn posted a recipe for this over on Taking Route last week and I was quick to get into my kitchen and make my version of it. She made hers by the cup but I took the spice mix and incorporated it into my recipe for Hot Chocolate Mix. I like anything that cuts down on work. The only downside of these spices mixed into the hot cocoa mix is that they leave some dregs at the bottom of your mug, but just don't take the last thick sip and you'll be good! This stuff is amazing and I hope you enjoy it! Maybe even gift some to friends! I love Christmas.
Chai-Spiced Hot Chocolate Mix
2 1/2 cups milk powder
2 cups powdered sugar (powdering your own works great)
1 cup cocoa
2 tsp cornstarch
2 tsp vanilla powder (opt)
1 tsp salt
Chai Spice Mix
3 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground allspice
1 tsp ground cloves
1 tsp cardamom (or 1/2 tsp cinnamon and 1/2 tsp nutmeg)
pinch or two of ground black pepper
Whisk all the hot chocolate ingredients and all the chai spices together. Store in an airtight container. Use 3-4 Tbs of mix (to taste really) in a regular 8-10 oz mug of hot water and enjoy!
*I changed up the spice mix in the original recipe I was inspired by. It had a little too much ginger for my taste. But if you like more ginger, just do 3 tsp of it and 2 tsp of the cinnamon. If you can't get vanilla powder, it doesn't really matter for this variation of the mix with all the other spices, but I do like it in the original hot cocoa mix.
