Beer Bread

Happy New Year! I think I'm officially old. I was in bed by 10pm last night. I'll party for Chinese New Year (only because the war-zone outside my window will leave me no choice!). I'll tell you, I'm not feeling very inspired with new foods or things to share with you so I'm just going to post a quick staple at our home during cold, winter, soup-eating months. I love the crusty outside this bread gets in its quick bake time. Seriously, you can't get easier than this bread and it goes wonderfully with a lot of soups. Our favorite to serve it with is Corn, Sausage, and Potato Chowder though. I've posted a couple variation ideas at the bottom from my friend, Anita.


Beer Bread
3 cup all-purpose flour
3 Tbs sugar
1 Tbs baking powder
1 tsp salt
1 12oz can beer, club soda, or Sprite*

Grease an 8x4 inch loaf pan and set aside. In a medium sized mixing bowl, stir together your dry ingredients. Pour in the can of liquid and gently stir until everything is moistened. Put in prepared loaf pan. Bake at 350F (180C) for 35-40 minutes, until crusty and golden brown. If desired, you can put 1-2 Tbs melted butter over top after baking and before removing from the pan.

*If using Sprite you can cut back the sugar to 1 Tablespoon if you want to keep it from being too sweet.

Herb Variation: Add 1 tsp dried oregano and 1/2 tsp basil or marjoram.

Cheese Variation: Add 1/2-1 cup shredded cheese.

Herb Cheese Variation: Add both of the above!

Jalapeño Cheese Variation: Add a Tablespoon or so of chopped jalapeño along with the cheese!
