Chai-Spiced Honey Roasted Almonds

I hope you've enjoyed all the fun recipes this week. I've had fun getting them ready for you! So here's the story with these almonds. I mixed up a whole amount of chai spice to use in the Chai-Spiced Hot Chocolate Mix I posted last week. I made the full amount but I only mixed up a half recipe of the cocoa mix and didn't use all the chai spice. Then I saw this recipe for honey chai almonds. Rather than following the spices listed, I used the leftover chai spice I had from the hot chocolate. These nuts are SO yummy. I like the crunch the honey gives them without leaving a heavy sugar coating. I like the light flavor of spices and the touch of salt. You definitely should make a bowl of these for any gathering you're going to in the next month, or maybe gift them to a friend, or maybe eat them all yourself. Hope you all have a Merry Christmas!


Chai-Spiced Honey Roasted Almonds
1 1/2 cups raw almonds
1 1/2 Tbs honey
2 1/2 tsp chai-spice*
1/4 tsp salt
several pinches black pepper
Sea salt for topping (regular will work)

Preheat oven to 400F (205C). Line a baking sheet with parchment or foil and lightly grease. Mix spices, salt and black pepper together in a small bowl. Place the almonds on the baking sheet and roast in oven for 5-7 minutes. Remove almonds from oven and drizzle with the honey. Stir or toss well to coat. Sprinkle on spice mix and toss well again. Place back in oven for another 5-7 minutes. Remove from oven and immediately transfer almonds off the baking sheet onto a plate and spread out to cool. The nuts will stick together but will easily break apart once completely cooled. 

*If you just want to measure the spices for this recipe versus using a premixed spice you can use: 
1 tsp cinnamon
3/4 tsp ginger
1/4 tsp cardamom or nutmeg
1/4 tsp cloves 
1/4 tsp allspice
Or something along those lines! Really any mix of the spices will probably be good! 

**If you have about a cup of these that just aren't getting eaten, turn them into Lärabars by processing it with about 1 1/4 cups dried dates and a dash or two of water if needed! So good!
