Peanut Butter Banana Blender Muffins

Peanut Butter. Bananas. Chocolate Chips. No sugar. No gluten (if you're into that). Easy enough for the kids to make. Breakfast on the table in no time. Need I say more?! These little beauties (adapted from here) have been making a regular appearance on our table. We love them most in mini-muffin form, but they also work as regular sized muffins--they just take a little longer to bake. If you are cooking with your kids, this is a great starter recipe for them as you're teaching them some things! They can do it on their own very quickly. My kids have so much more enthusiasm about what we eat when they've had a part in it. Hope you'll enjoy!


Peanut Butter Banana Blender Muffins
2 bananas
2 eggs
1 cup creamy peanut butter
1/3 cup honey
2 tsp vanilla
1/2 tsp baking soda
1/8 tsp salt
~1/4 cup mini chocolate chips or finely chopped chocolate bar

Line 36 mini muffin cups or 10 regular muffin cups with paper or grease (if you are using silicone you don't need either). Combine everything except the chocolate in the blender until smooth. If desired, mix up to 2-3 Tbs mini chocolate chips into batter. Pour batter into prepared muffin pans, filling about 2/3-3/4 full. Sprinkle with remaining chocolate chips (or if you want to reduce the amount of chocolate, just leave it out of the batter and only sprinkle a bit on top). Bake at 400F (205C) for 8-12 minutes for mini muffins or 15 minutes for regular sized. Remove from oven and enjoy! 

Note: If you are using mini chocolate chips, you really can totally get by with about 1/4 cup or less for the whole recipe--I mix in about 2 Tbs and top with 1-2 Tbs, depending on how chocolatey you like it.  If you only had larger sized chips, you could just sink one or two in the middle for chocolatey centers! The regular sized chocolate chips would work great in regular sized muffins. 

For China people: I've often found mini chocolate chips on Taobao from baking supply sellers.
