I really love getting to cook for dinner guests! I often try to serve company meals that manage to stretch meat versus serving large portions of it since its often a more expensive ingredient. But sometimes you just need some down home cooking and you need to serve a meat and some veggies! My mom calls it a "meat and three." Kind of a cafeteria or home cooking idea--just some meat and sides. This is my go-to for a meal like that. This pork roast goes great with all kinds of sides but these are definitely a few of my favorites.

Twice Baked Potato Casserole or Garlic Mashed Potatoes
Spinach Salad with Poppy Seed Vinaigrette and Candied Nuts
I usually do the meat in the crock pot --all the work is done in the morning! The salad can easily be prepped earlier in the day and parts of it even the days before, like the salad dressing. The potato casserole can be done ahead, up to a day, and kept in the fridge. If you just do mashed potatoes they are not time consuming.
This menu is complete and filling as is, but if you'd like a bread, it goes great with Crescent Rolls! Enjoy!
