I just moved apartments. Its been a couple weeks of packing and unpacking. Its been a week of cereal and eating out. Its been days of missing my regular exercise routines. Its been a week of no dessert since my kitchen was packed up and the oven wasn't plugged in. Last night we needed a treat and I had everything I needed for no-bake cookies. So that's what we did for our sweet, chocolate fix. I'd just had a jar of Hainan coconut oil arrive and I decided to switch out the butter in the regular recipe with the coconut oil, thinking the bit of coconut would be a nice complement. It was definitely a smart move. While these don't have much butter to begin with, its nice to feel you've made even some small healthier switches here and there. And I love it when the final product is all the better for it! Also, these are a great dessert for those of you needing gluten free options.
No Bake Cookies
2 cups sugar
1/4 cup cocoa
1/4 cup coconut oil
1/2 cup milk
2 1/2 cups quick-cooking oatmeal
3/4 cup peanut butter
2 tsp vanilla
Combine sugar, cocoa, coconut oil and milk in a saucepan. Cook over medium heat, stirring regularly. Heat until mixture comes to a boil. Boil about 1 more minute and remove from heat. Stir in oats, peanut butter, and vanilla. Drop spoonfuls onto parchment paper, wax paper, or a Silpat and allow to cool. Enjoy!
China people: I like to buy the organic or natural coconut oil from Hainan. Its solid in cooler temperatures and liquid in summer.

This sounds scrumptious! One question...for those with a peanut allergy, do you have a suggested substitute for the peanut butter?
ReplyDeleteHmm. I think you could substitute another nut butter, but I'd make sure to get one that's as creamy as possible versus the really natural, grainier ones. Let us know how it goes!
