Barbecue Chicken Pizza

We like having pizza and movie nights when we can. It probably happens twice a month. Lately, our favorite pizza has been barbecue chicken pizza. We've eaten it at CPK in Hong Kong for years now and last year sometime I decided to start making our own. Its SO easy and its a nice change from pepperoni or sausage for us. One of these days I'll devote a post to the awesome pizza crusts we've been making that make the pizza even better. But for now, just make whatever kind of crust you normally make and top it with the following...


Barbecue Chicken Pizza
1-2 Chicken breasts, diced
Sliced red onion
Chopped fresh cilantro leaves
Mozzarella cheese
Barbecue sauce

Make your pizza crust as usual.

Stir fry cubed chicken in a small amount of olive oil. Shake on a little salt and pepper to season. Just before the chicken is finished, add about 2 Tbs of barbecue sauce. If you are using dough (rather than a precooked crust), brush a little olive oil over the dough and then use about 1/8-1/4 cup of barbecue sauce to spread over pizza dough (or just spread sauce over your precooked crust). This will vary depending on the size of your crust. Sprinkle chicken around over the sauce. Add sliced onions and cheese, sprinkling cilantro on the top. Bake at 425-450F or whatever your crust recipe suggests.

Notes: If you want this to really be like one in a restaurant, you need to make about 1/3 of your cheese smoked gouda! This is really good with just mozzarella, but that bit of smoked gouda makes a huge difference, too! So if you have that as an option, try it! We got a piece of it not long ago when we were traveling in Taiwan and loved the difference it made--I used the last of it last week though! Sad day!
