Here is another salad dressing recipe to start your week! We really like this dressing. It goes really well on Taco Salads or just as one of your salad dressings to serve with a meal--especially if its with a Mexican dish like Enchiladas. Enjoy!
Cilantro Lime Ranch Dressing
1 cup mayo
1 cup buttermilk (sour regular milk with 1 Tbs vinegar or lemon juice)
4 Tbs Ranch dressing mix (one packet is fine--its about 3 Tbs)
1 Tbs lime juice
1 Tbs finely chopped cilantro
1/2 tsp garlic powder
1/2 tsp Cajun seasoning
1/2 tsp cumin
1/4 tsp chili powder
Mix everything and chill. This is best if made a day ahead.
Notes: You may want to start with 1/2-3/4 cup of milk and add from there. I think it would totally work to start with a homemade Ranch and just add everything from the lime juice on.
