Recently I went to a baby shower. My friend Liz had made a really yummy cheesecake with spiced apples on top of it. I thought the crust was especially yummy for China and asked if she'd actually used real Graham Crackers for it. She laughed that she hadn't but had used a local substitute. Several of us asked which cracker! She and her husband had asked a local restaurant near their office what they used for their cheesecake crust and she had found the same cookie for hers.
They are by a brand called Khong Guan and are called California Cookies in English. They come in a large box. I found them at even a small HongQi grocery store near my house. I have used them in a graham crust for cheesecake and I used them today in an upcoming apple bar recipe. They've worked great! I wouldn't say they are that different than some other cookie substitutes I've used, but they are certainly near the top of the list.
