Feeding a Crowd #4: Build Your Own Mexican

It seems I regularly host large numbers of dinner guests in the summer. BBQ sandwiches with some salad and chips is definitely one of my favorite menus for a crowd in the summer but a Mexican twist is a favorite too. One of my go-to's these days is build your own Nachos. But really you can make an easy variation on this by doing build your own Rice Bowls if chips are not easily available--yet another fresh variation is to use all the toppings over lettuce for taco salads. And you could always just do tortillas for tacos! In the summer, people can easily fill up on any one of these Build Your Own Tex-Mex variations without a bunch of extra sides! Just make these according to what is easy and what is available to you!


Feeding a Crowd Menu #4: BYO Tex-Mex Variations

Nachos
Chips
Fajita chicken or ground beef/pork with Taco Seasoning
Grated cheese
Beans
Chopped cilantro
Lettuce
Diced tomato
Diced onion
Salsa
Sour Cream or Yogurt
Guacamole or diced avocado

Allow your guests to build their own and enjoy!!

Notes: I find I don't have to worry about broiling these if the meat and beans are warm and you add cheese over that. Just have forks on hand.

Taco Salads
Use all the above ingredients but have lots of lettuce and chips more as a garnish. This is a great way to go if you have to make your own chips or if they are expensive! Check out this fun idea for making bowls out of tortillas! You can also use this Cilantro Chimichurri for extra yumminess.

Rice Bowls
Have all the above ingredients and add them over rice as the base. I use this recipe for my rice, but even plain steamed rice will work if you prefer.

Tacos
Buy or make tortillas and just do a simple taco meal! Don't even worry about time consuming sides or maybe just make a quick Spanish Rice!

*If you have a really big group or are short on time, consider asking your guests to contribute some of the toppings should they offer to help! I find its often easy for people to bring some shredded lettuce or chopped vegetables and it saves you a little time!
