My family is kind of weird about chicken pot pie, so its not one of my go-to meals for anything (even though I love it and love the way I make it). But I was talking to my friend Erica recently and she said pot pie is one of her favorite meals for company. So, consider this menu next time you have a crowd to feed… (See Menu #1 if you missed it!)

Chicken Pot Pie
A side or two like:
Bell Pepper Cabbage Slaw
Garlic Roasted Broccoli or Broccoli Salad
Fruit Salad
Any other fresh lettuce salads
Chicken Pot Pie may not sound super crowd friendly as most pie plates would only provide 6 servings or so. But if you double the recipe, put it in a 9x13 casserole dish and top it with biscuits, then you have a much faster, crowd-friendly version of this meal! You could also probably still top with a pie crust if you're partial to pastry crust like I am!

If I need a big casual meal in a hurry, I usually do scrambled potatoes because it's a one dish meal that goes a long way with a few ingredients. My South Carolina in-laws call it Texas Hash. (Bacon, diced potatoes, eggs, and cheese all in a skillet. Especially good with chorizo instead of bacon if you can make it.) Another we like is burrito bowls, especially with your cilantro chimichurri rice! I also like to do a simple meat with really filling sides, like baked macaroni and cheese.
